Hey Reader -

This month's biscuit is a bit different...

And that's because it's kinda a scone.

I wanted to make something green and something involving pistachios this month and, in my opinion, scones and biscuits are too similar for me to not bring this idea to life.

** Fun Fact (aka something I learned in the midst of this recipe development) **

The only difference between biscuit and scone recipes is that half of the buttermilk used in many biscuit recipes is replaced with 1 egg.

The egg's binding ability keeps scones from falling apart even though the dough appear to be drier.

Biscuit of the Month

March's biscuit of the month, Pistachio and Lavender Scones, is really just a slightly sweet biscuit cut into a triangle instead of a square or a circle.

March's Biscuit of the Month included:

  • a slightly green-tinted scone with pistachio pieces inside
  • a lavender glaze
  • crushed pistachios on top
